Ensure to differentiate the tasks performed in the different sinks. Wash hands in hand sink, wash dishes in 3 comp sink, work with food in prep sink.

Diced tomatoes at 46F on prep top. Tomatoes were diced approximately 1 hour prior. Cool tomatoes in walk-in after prep before placing on prep top. Keep potentially hazardous foods below 41F or above 135F. Tomatoes placed in walk-in to cool.
