Observed wiping cloths on counters. Always store in sanitizing solution of 100 ppm chlorine. Obtain test strips fro chlorine and use daily.

Observed 3 live (slow moving) cockroaches in the front wait station and by the dishwasher, along with some dead roaches. The facility was treated for roaches on 3/17/17 by a licensed pest control technician. Observed standing water and food debris on kitchen floor and in between floor tiles. Clean and repair tiles as instructed.

Cooling logs show that all food is now being cooled rapidly, within the required times. Food in the cooling process measured <70 F before the 2 hour mark. Continue to use the cooling methods demonstrated: ice bath and shallow pans and stirring. Only place food in deep covered containers once it reaches 41 F.

Clean flood debris and standing water to prevent attracting or harboring vermin. Clean floor sinks and inside the ice cream freezer. Observed a lot of standing water on the kitchen floor and pitting in the grout between floor tiles. Repair grout and keep standing water from accumulating on the floor. Seal any cracks or crevices to prevent entry of vermin.
